ROAST GOAT’S MEAT WITH SPAGHETTI

Serves 8-10

 

 

 

 

   INGREDIENTS

   1kg goat’s meat or wether lamb cut to medium-sized slices

   2 tomatoes, large and mashed

   1 teaspoon tomato paste

   1 onion, medium-sized and finely chopped

   1 cup olive oil

   salt and pepper to taste

   1 packet spaghetti (penne or ditali)

   a lot of grated cheese (anthotyro / ricotta) or salty gruyere

 

 

 

 

 

 

 

 

 

DIRECTIONS

  1. Use a pan to sauté the onion in olive oil for 1-2 minutes. Add the meat to brown on all sides. Add two cups of water, cover the pan and simmer for 20-30 minutes.
  2. Uncover the pan and add the salt, pepper and tomato. Continue cooking for 20-30 minutes.
  3. Use a perforated spoon to remove the meat and keep it warm aside. Add as much water as may be required. Bring the water to a boil and add the spaghetti. When the spaghetti is done, top it with a lot of grated cheese and serve it with the meat.
