Protected Geographical Indication Heraklion
Grape Variety: Sauvignon Blanc
Region: Peza and Alagni, Heraklion.
Terroir: Altitude of 300-450 meters, vineyards of royat pruning, argillo-calcareous soil, yields of 48-60hl/ha. Vineyards aged 7 to 10 years.
Oenology: Cold-extraction for 4 hours, settlement of the must, inoculation with selected non-aromatic yeasts, alcoholic fermentation in stainless steel tanks at 15-18°C.
Personality: Clear pale yellow colour with greenish nuances. Intense aromas of exotic fruits (banana, pineapple, kiwi) with botanical strings, pleasant taste and soft fruity aftertaste.
