Protected Geographical Indication Crete
Grape Variety: Assyrtiko
Region: Katalagari, vineyards of Kastelos, Heraklion.
Terroir: Altitude of 450 meters, argillo-calcareous soil, vineyards of royat pruning, yields of 52hl/ha. Vines 10-12 years of age which produce wines with rich structure, balanced character and high acidity. The mountains lying in the south and the cool summer winds are responsible for the smooth ripening of the grapes.
Oenology: Cold-extraction for 7-8 hours. The must is selected in inert gas atmosphere with pressure up to 0.3Bar and is then clarified at 10-12°C. The clear grape juice is then transferred to the fermenters where it is inoculated with selected yeasts. Fermentation begins at 16°C for the first two days and gradually increases up to 18,5°C, until it finishes.
Personality: Bright pale-yellow colour with greenish nuances. Strong aromas of exotic fruits (mango and pineapple). In the palate it is well-structured, with crispy acidity. It has a long and refreshing aftertaste with a persisting aroma of citrus and red grapefruit.
